I am a home cook, one that needs to feed the family every day with nutritiously well balanced meals.
I love fancy food and dream about exotic tastes dancing in my mouth, the ones a professional chef spends days perfecting in his restaurant.
Honestly, I’m pretty sure most busy people, like you and I, can’t cook like that or even have a desire to do so, even if they could, night after night.
So let me share with you my little secret.
My pantry is not at all stocked the way it should be but, for the most part, I can always wing a good-for-you meal somehow, because I have the basics.
I opened our pantry and saw a wealth of inspiration from just these ingredients. Take a look.
This is the perfect opportunity to use all the little bits of food that tend to take up shelf life.
MENU
~
Grilled meat/chicken/fish de-glazed with citrus juice and herbs.
QUINOA SALAD
Tossed salad with mild yogurt mint sauce.
dry blueberries
Quinoa
carrots
mint & cilantro
lime
pumpkin seeds
olive oil
onion
cashew nuts
Fist things first,
cook the quinoa (in chicken broth).
later:
in the food processor
I blitz the carrots,
then the cashews
plus the mint along with the cilantro.
I might have added the onion, but forgot the effects of raw onions on my husband’s Acid Reflux.
Quickly I toasted the sunflower seeds watching to make sure they didn’t burn, this little step adds so much flavor.
Then the magic started.
The key for me when cooking is orchestrating the layers of flavor.
No brain science just add a handful of the blueberries, carrots, herbs and nuts. Season with salt add olive oil,
squeeze the lime juice and zest to add another layer of flavor.
Home food is just that home food. Reflecting my personality not my aspiration.
